Gracious Living Creamy Cumin Cucumber Chia Dressing-Grace Van Berkum

1 peeled cucumber 2 tbsp tahini 1/2 cup extra virgin olive oil 3/4 cup water (depending on desired consistency) 1 tsp cumin powder 1 tbsp chia seeds Juice of 1 fresh lemon Himilayan sea salt to taste


Blend in blender till creamy and smooth.


Serve over salad, veggies, or gluten-free grains. Store in a a mason jar, old olive or jam jar in fridge.  Shake it up before using.


Shhhhh-ake it good! Will keep in fridge all week.


Variation: Use fresh dill instead of cumin. Dill seed is a very good source of calcium, and a good source of manganese, iron, fiber, and magnesium.
